Three things we do not do
No analytics cookie before your choice. If you do not choose, nothing runs.
Google Analytics runs from Cloudflare's edge and does NOT leave the _ga cookies in your browser.
In the consent record we keep neither your IP address nor your email.

What stays in your browser storage
These are not cookies: they are entries the site keeps in your browser and that do not travel with every request. We list them anyway, because they are data on your device.

So that we can demonstrate the consent was given, we keep the date, the site, the language, the choices and a random identifier. Nothing names you: that identifier is the only thing linking the rows to each other, and it lives in your browser.
